Biscuits with homemade sausage sawmill gravy. Very simple to make. One pound of ground sausage, 1/4 cup flour, 2 cups of whole milk and salt and pepper.
Fry up the sausage on medium high until cooked through. Set cooked sausage aside in a bowl, leaving about 2 tablespoons of the fat in the pan.
This sausage was a little lean so I added butter to compensate. Reduce the heat to low. Then make a basic roux by slowly adding the flour and whisking it into a paste. You want it to be light brown in color and have a nutty aroma. Should take about two or three minutes. You need to constantly stir to avoid burning and also get any fond (those brown bits) from the bottom of the pan.
Then while still whisking, drizzle in the milk emulsifying it with the roux. You will have a thin, milky sauce. Increase the heat to medium and bring to a simmer. The gravy will thicken. Remove from the heat and season to taste with salt and pepper. Add the cooked sausage into the gravy and stir to coat. Serve immediately on biscuits split in half.
