And the results of the Cupboard Challenge? Ramen Noodle Chickpea patties with a side.of.tzatziki sauce.
After draining the chickpeas, I pulsed them several times in the food processor until almost like sand. Then added to a bowl along with the ramen seasoning packet, two teaspoons of cumin and a pinch of kosher salt. Then mixed in a beaten egg until combined. Formed into four patties. Fried in a nonstick pan about four to five minutes a side until golden brown. Don't be tempted to flip them too soon or they might break apart. The noodles on the edges get nice and crispy.
Next time I would bump up the seasoning a bit. Probably add some red pepper flakes or hot sauce.
