My Favorites from Hyatt Zilara Cacun

I recently had a four night stay at one of my favorite hotels in Cancun - possible anywhere. Hyatt Zilara is in the Hotel Zone area of Cancun. There are great beaches in this section.  And Hyatt Zilara has a terrific swim up bar with an infinity edge.  Plus wonderful restaurants.  These were some of my favorites bites from the trip.  

I love a whole fried fish. If it is on the menu, I will usually order it. Punta Vista is the lunch restaurant at Zilara and they had a great version of this. 

The fish was coated in a spicy dry rub.  Very flaky and flavorful fish.  Served with a purple cabbage slaw with a sweet balsamic vinaigrette and buttery white rice.  

This seafood stew was from the same place. 

Better labelled as a bouliabase, this has great seafood flavor enhanced by some chorizo. About five shrimp, calamari, four little neck clams and a huge piece of crab in the shell. 

This dish was also from Punta Vista.  It was called a Molcaljete which I had never heard of. After looking it up, I realized that the name refers to the type of cooking vessel and not the. Ingredients.  

The Molcaljete is a version of a mortar - as in mortar and pestle - but without the latter.  It was filled with melted cheese on the bottom.  Then roasted veggies including nopale, peppers and onions.  Plus we'll seasoned grilled chicken and beef.  Served with fresh corn tortillas, it was a great twist on a fajita.
