We made it onboard the Emerald Princess! I love that Princess has the dining room open for lunch on embarkation day.
First lunch was a delicious avocado and shrimp salad, chickpea soup and grilled salmon. I have had the salad and the salmon before. Both still as good as I remember. The salad had some shredded radichio to prevent it from being too sweet. The salmon was cooked to a perfect medium with a delicate butter sauce. Some al.dente vegetables for crunch.
The standout for me was the chickpea soup.
This was like an Italian Tuscan bean soup. Great flavor of oregano, onion and a hint of garlic. So smart to use the chickpeas. Some were pureed to provide the creaminess and others were left hold for texture . A smartly designed soup.
For dessert it was espresso, vanilla and Nutella ice cream.
I had wanted chocolate which they didn't have that so our server brought "replacements". All very good. The espresso had great notes of coffee and cream.
